Spinach with Sesame
Horenso no Goma-ae
- 400g spinach
- 2tbsp Black Sesame Paste with Honey
- Toasted sesame seeds, to garnish
- Blanche the spinach in boiling salted water, then remove, run under cold water and squeeze out all the excess water.
- Roll into two tight parcels and serve with a generous serving of Black Sesame Paste*. Sprinkle with toasted sesame seeds.
*You can replace the Black Sesame Paste with black tahini or tahini paste.
*You can replace the spinach with asparagus or green beans.
Born in Hiroshima, Japan. After training as a chef in Tokyo and Osaka, Chef Funakoshi first came to the UK in 1975. He returned to Japan before coming back to the UK in 1984, where he has lived ever since. Chef Funakoshi has built up a wealth of experience, including establishing Chiso Restaurant. He now works as Head Chef at Sushi Bar Atariya in Hendon. When not serving up superlative sushi, Chef Funakoshi loves to read and sing karaoke.
