Wabi

Wabi is the brainchild of former Nobu London Head Chef Scott Hallsworth. Spread over two floors, with a lovely garden to the back that begs to be lounged in over the summer, it’s a small but perfectly formed operation that turns its size and location to it’s (and its diners’) distinct advantage. Organically grown Japanese vegetables are sourced from a local Sussex farm, sashimi is from fresh south coast catches, seasonal availability dictates the menu, and the menu is constantly being refined by Scott and his team. Standout on the well-organised menu are roasted scallops with yuzu truffle egg sauce and yuzu tobiko, and tea smoked salmon salad with avocado, sushi rice, kizami wasabi dressing and grapes. Try the Deluxe Tasting Menu for an indulgent contemporary Japanese dining experience without the premium London price, then spend the difference at the smartly stocked bar; try sake or shochu, or perhaps the signature Wabi Martini, made with rhubarb, sake, Prosecco and cinnamon. Drop in during the day for a set lunch, and there’s a kid’s menu for budding foodies, too.
