Sushi Workshop
About the Eat-Japan Sushi Awards
In conjunction with the Sushi Awards, Eat-Japan organised sushi workshops for enthusiasts and professionals alike in 2006, 2007 and 2008, with the help of the Sushi Masters, the Seven Sushi Samurai participants, and UK based Japanese chefs and experts.

Events organised include:
Authentic Skills Course: an introduction to the essential techniques of sushi making, as learned by generations of apprentices in Japan. Topics covered included knives, sharpening stones, fish preparation, rice preparation, cutting methods, arrangement, and presentation.
Creative Recipe Course: an introduction to innovation and experimentation, led by the Mandarin Oriental’s Jeff Ramsey and Ichiro Kubota, then of UMU. Lectures and demonstrations were combined with group work to encourage students to take a fresh and original approach to menu development.
Introduction to Sushi: an introduction to basic sushi-making techniques for small groups of beginners. Participants learnt a variety of different sushi techniques, from how to make the perfect rice for sushi, to simple and easy ways to enjoy fresh sushi in their own homes.
Masterclass for Professionals: comprising a foundational lecture, authentic sushi tasting session, and a comprehensive introduction to high-level sushi preparation and arrangement skills.
Course Tutors:
Our courses have been led by many outstanding and veteran sushi experts, including the Seven Samurai participants at the awards each year, Masayoshi Kazato of the All Japan Sushi Association International Division, and UK-based Japanese chefs, such as Ichiro Kubota, formerly Head Chef at London's UMU.
