Deep Frying with Rice Bran Oil

For deep fried dishes, it’s very important to control the temperature of the oil. To test the temperature, just drop a pinch of panko into the oil. If it just floats to the surface, then the temperature is still too low. If it floats to the surface and starts to sizzle, then it’s right (170°C). If it starts to sizzle as soon as it hits the oil, reduce the heat; the oil is too hot. Once at 170°C, reduce the oil temperature to medium low; this is best for actual deep frying.
