Japanese tamago-yaki are (almost) impossibly thin, and can seem like a challenge. But this step-by-step guide should help you achieve omelette perfection!

Our Celebration Chirashi Sushi recipe calls for shredded egg, which is made by slicing up tamago-yaki, thin omelettes made from egg, sugar and sake. To make perfect tamago-yaki, mix 1tsp sake, 1tsp sugar, and a pinch of salt. Add this to two eggs, and beat. Heat a frying pan to medium heat, add a little oil, then pour in one quarter of the egg mix, tilting to spread the mix evenly. When the surface has cooked turn it over to cook the reverse side for a second, then slide onto a plate, and remove any excess oil with kitchen paper. Repeat three times. For Celebration Chirashi Sushi, these sheets should then be cut in half, rolled up, and finely sliced to created the shredded egg bedding.
